About us

Along the Tennozu Canal, there is an elegant, Western-style building that looks like a warehouse. A pier extends from the building toward the canal, and at the end of the pier, there is a landing place (for people coming by boat) and even a kind of lounge on the water.

This is T.Y.HARBOR, a brewery restaurant. It is an 8-minute walk from Tennozu Isle Station. It takes less than 20 minutes from Shinagawa Station. The restaurant’s unusual appearance, combined with the unique feature of having a brewery attached to it, makes it crowded with people day after day, night after night. I once visited there on the occasion of a celebration, and the night view of the canal from the window was breathtaking.

In this article, I would like to introduce T.Y.HARBOR, a famous landmark in Tennozu, its history, and its menu (including beer, of course!), which it is proud of. ), I will introduce you to T.Y.HARBOR.

History

Tennozu has a long history and was originally a small sandbar formed by the accumulation of earth and sand off Shinagawa-juku on the former Tokaido Highway, and was named Tennozu after the mask of Gozu Tenno was pulled up from the sea nearby in 1751. The island has such a history. It was on this island with such a history that Terada Warehouse founder Yasunosuke Terada bought land and built a warehouse using the steel frame of a factory destroyed in an air raid in 1951, shortly after the war.

Although once a warehouse district, it developed into a business district, taking advantage of its location surrounded by water and greenery and within walking distance of Shinagawa Station. In 1997, a nearly 50-year-old warehouse was renovated on this small island in Tokyo Bay.

Today, the brewery restaurant is crowded with tourists and couples, but at the time of its opening, the Terada Warehouse did not have the know-how to operate a restaurant, and the number of customers was so sparse that the company soon faced bankruptcy. In 2015, the name was changed from “T.Y. HARBOR BREWERY” to “T.Y. HARBOR” and has been in business ever since.

Incidentally, T.Y. is derived from the initials of Yasunobu Terada, founder of Terada Warehouse, and the current management company, Tysons, was also named after TY’s SONs, meaning Terada’s sons.

What is Beer?

Beer has a history dating back thousands of years to Mesopotamia and ancient Egypt. Because of its high nutritional content, including vitamins and minerals, it was once used as a medicine and a valuable drink. However, since the 1980s, many microbreweries (small breweries) have emerged in Europe and the United States as people questioned the mass production and mass consumption of beer, and the value of traditional hand-crafted beer has been reevaluated.

In Japan, since the first beer was brewed at a brewery in Yokohama in 1870 (Meiji 3), more than 100 breweries were producing beer in the mid-Meiji period. For a long time, however, only a limited number of major products were available. However, deregulation in 1994 drastically lowered the production volume required for a license, and the following year saw the birth of many microbreweries and the start of a “microbrewery boom.

The number of microbreweries, which at one time exceeded 300, declined to less than 200 as soon as the boom faded due to problems such as inconsistent quality and high prices. As the surviving breweries continued to communicate their appeal and new brewers emerged, understanding of high-quality beer grew, and a new movement began in the late 2000s, known as the “craft beer boom. In an age when the brewer’s story and commitment to his or her craft attracts sympathy, craft beer is taking root as a new way to enjoy beer. Craft beer, which began as a return to more natural brewing methods and a commitment to quality, is steadily growing as a culture as it enters a new era of individuality and creativity.

1. Barley milling

Barley is soaked in water to germinate and produce malt. When dried, the color changes from green to golden, which is the color of beer. If it is roasted strongly, like coffee, a dark beer can be produced.

Saccharification

When crushed malt is boiled at a certain temperature, the starch in the barley is converted to sugar by the action of enzymes in the malt, producing sweet “wort. The temperature control at this stage changes the character of the beer.

Boiling

After the wort is filtered, it is boiled to adjust the sugar content, and hops are added to give beer its distinctive aroma and bitterness. The language of hops is “unfairness. Hops not only influence the flavor and aroma of beer, but also prevent the growth of bacteria in the very delicate wort.

4. Fermentation

Yeast is added to the chilled wort to ferment. Fermentation is the process by which yeast breaks down sugar into alcohol and carbon dioxide. The yeast is carefully selected by our craftsmen from among beer yeasts from around the world, aiming for a beer flavor that is unique to Tysons & Co.

5. Storing and Secondary Fermentation

The resulting “young beer” has a rough taste, so it is left to mature for a few weeks. This allows the beer to mature and become a delicious beer. This is the moment when beer becomes an adult rather than a child.

6. And then

The required amount is filled into kegs without filtration. Without any modification, the beer is fresh and full of nutrients with live yeast. This is true draft beer.

Pale Ale

A pale bronze colored ale, T.Y.HARBOR BREWERY’s standard beer with a fruity flavor mixed with a well-balanced hop bitterness.

Amber Ale

This amber-colored beer is made with five types of malt, allowing you to enjoy the natural sweetness and flavor of the wheat. It has the richness of roasted malts and is low in carbonation and bitterness.

Wheat Ale

A typical Belgian-style beer made from a mixture of barley and wheat. The aroma is characterized by banana-like fruit and clove-like spice.

India Pale Ale

Made with a blend of hops characterized by seven different citrus aromas. You can enjoy its powerful bitterness, citrus aroma, and robust fullness.

Imperial Stout

A black beer with a robust bitterness characterized by the depth and creamy richness of roasted malts, as well as coffee and caramel-like flavors.
